Thai Beef With Basil Recipe

Ingredients:
- 2 tablespoons vegetable oil, divided
- 6 garlic cloves, thinly sliced
- 2 red chiles, thinly sliced (seeded for less heat if desired), divided
- 1 pound ground beef
- Kosher salt and freshly ground Black pepper
- ½ cup low-sodium chicken broth
- 3 cups fresh basil leaves, divided
- 2 medium carrots, julienned or coarsely grated
- 2 scallions, thinly sliced
- 4 tablespoons fresh lime juice, divided
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon fish sauce (such as nam pla or nuoc nam)
- 1 teaspoon sugar
- Steamed rice and lime wedges (for serving)
Preparation Steps:
- Heat Oil: In a large skillet, heat 1 tablespoon of vegetable oil over high heat.
- Cook Garlic and Chile: Add sliced garlic and 1 sliced chile. Stir and cook until fragrant (about 30 seconds).
- Cook Beef: Add ground beef. Season with salt and pepper. Cook, breaking it up with a spoon, until browned and cooked through (about 8-10 minutes).
- Add Broth and Basil: Pour in chicken broth and 2 cups of basil. Stir and cook until basil is wilted (about 2 minutes).
- Prepare Slaw: In a small bowl, combine carrots, scallions, 1 tablespoon lime juice, the remaining chile, and 1 cup of basil leaves. Toss to mix.
- Make Dressing: In another small bowl, whisk together soy sauce, fish sauce, sugar, and remaining 3 tablespoons lime juice until sugar dissolves.
- Assemble Dish: Serve rice topped with the beef mixture and slaw. Drizzle with the soy dressing and serve lime wedges on the side.
