  • 1 pound ground beef
  • Kosher salt and freshly ground Black pepper
  • ½ cup low-sodium chicken broth
  • 3 cups fresh basil leaves, divided
  • 2 medium carrots, julienned or coarsely grated
  • 2 scallions, thinly sliced
  • 4 tablespoons fresh lime juice, divided
  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon fish sauce (such as nam pla or nuoc nam)
  • 1 teaspoon sugar
  • Steamed rice and lime wedges (for serving)

Preparation Steps:

  1. Heat Oil: In a large skillet, heat 1 tablespoon of vegetable oil over high heat.
  2. Cook Garlic and Chile: Add sliced garlic and 1 sliced chile. Stir and cook until fragrant (about 30 seconds).

  4. Add Broth and Basil: Pour in chicken broth and 2 cups of basil. Stir and cook until basil is wilted (about 2 minutes).
  5. Prepare Slaw: In a small bowl, combine carrots, scallions, 1 tablespoon lime juice, the remaining chile, and 1 cup of basil leaves. Toss to mix.
  6. Make Dressing: In another small bowl, whisk together soy sauce, fish sauce, sugar, and remaining 3 tablespoons lime juice until sugar dissolves.
  7. Assemble Dish: Serve rice topped with the beef mixture and slaw. Drizzle with the soy dressing and serve lime wedges on the side.

Enjoy your meal!
