Ingredients:
- 1 pound ground chicken (or ground beef/turkey if on sale)
- 1/2 medium red bell pepper, diced
- 1 large carrot, grated (1/2 cup)
- 2 cloves garlic, minced
- 1/8 cup low-sodium soy sauce
- 1/8 cup ketchup
- 1/2 tablespoon honey
- 1/4 teaspoon crushed red pepper flakes
- Lettuce for wrapping
Directions:
- Add all ingredients to the slow cooker.
- Set the cooker to "low" and cook for 4-6 hours until the chicken is tender.
- Break apart the chicken.
- Spoon the mixture into lettuce leaves to serve.
