 Pumpkin Chocolate Chip Muffins Recipe

Yield: 1 dozen

Ingredients:

  • 1 2/3 cups flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin
  • 2 eggs
  • 1 stick (8 tablespoons) butter or margarine - melted
  • 6 ounces chocolate chips

Instructions:

  1. Preheat the oven to 350°F.
  2. In a bowl, mix all dry ingredients: flour, sugar, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, combine all wet ingredients: pumpkin, eggs, and melted butter.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined.
  5. Fold in the chocolate chips lightly.
  6. Grease a 12-cup muffin pan.
  7. Fill each cup with the batter.
  8. Bake for 20 to 25 minutes.
  9. Check for doneness using a toothpick; muffins should be slightly underdone when removed.
  10. Let cool before serving.
