Pumpkin Chocolate Chip Muffins Recipe
Yield: 1 dozen
Ingredients:
- 1 2/3 cups flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/2 teaspoon salt
- 1 cup canned pumpkin
- 2 eggs
- 1 stick (8 tablespoons) butter or margarine - melted
- 6 ounces chocolate chips
Instructions:
- Preheat the oven to 350°F.
- In a bowl, mix all dry ingredients: flour, sugar, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- In another bowl, combine all wet ingredients: pumpkin, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients. Mix gently until just combined.
- Fold in the chocolate chips lightly.
- Grease a 12-cup muffin pan.
- Fill each cup with the batter.
- Bake for 20 to 25 minutes.
- Check for doneness using a toothpick; muffins should be slightly underdone when removed.
- Let cool before serving.
