Cupcake Directions
Ingredients:
- 1/3 cup butter, softened
- 1/2 cup superfine sugar
- 3/4 cup self-rising flour
- 2 eggs
- 1 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease a 6-cup muffin pan or line it with paper baking cups.
- In a large bowl, beat the softened butter and superfine sugar with an electric mixer until light and fluffy, about 5 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Gradually mix in the self-rising flour until just combined.
- Spoon the batter evenly into the prepared muffin cups.
- Bake for 18 to 20 minutes, or until the tops spring back when lightly pressed.
- Cool the cupcakes in the pan on a wire rack.
- Once cool, arrange the cupcakes on a serving platter.
