Cupcake Directions

Ingredients:

  • 1/3 cup butter, softened
  • 1/2 cup superfine sugar
  • 3/4 cup self-rising flour
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 6-cup muffin pan or line it with paper baking cups.
  3. In a large bowl, beat the softened butter and superfine sugar with an electric mixer until light and fluffy, about 5 minutes.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. Gradually mix in the self-rising flour until just combined.
  7. Spoon the batter evenly into the prepared muffin cups.
  8. Bake for 18 to 20 minutes, or until the tops spring back when lightly pressed.
  9. Cool the cupcakes in the pan on a wire rack.
  10. Once cool, arrange the cupcakes on a serving platter.
