 Potato Casserole Directions

Ingredients:

  • 3 pounds potatoes, peeled & quartered
  • 1 1/2 sticks butter (6 ounces)
  • 2 small (3 oz) packages cream cheese, softened
  • 1 cup shredded Cheddar cheese
  • 1 jar (2 oz) chopped spicy pepper, drained
  • 1 small green pepper, finely chopped
  • 6 green onions, finely chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 teaspoon salt

Preparation Steps:

  1. Cook Potatoes: Boil the quartered potatoes in water for 15 minutes or until tender. Drain and mash them.

  2. Mix Ingredients: Add the butter and cream cheese to the mashed potatoes. Beat with an electric mixer on medium speed until smooth.

  3. Combine Other Ingredients: Stir in 1/2 cup Cheddar cheese, chopped spicy pepper, green pepper, green onions, Parmesan cheese, milk, and salt.

  4. Prepare Baking Dish: Spoon the mixture into a lightly buttered 11x7x1 1/2 inch baking dish.

  5. Bake: Preheat the oven to 350°F. Bake for 30 to 40 minutes, or until heated through.

  6. Add Cheese Topping: Sprinkle the remaining Cheddar cheese on top. Bake for an additional 5 minutes, or until the cheese melts.

  7. Optional Preparation: You can prepare the casserole the night before (except for the cheese topping) and refrigerate it, covered. Let it sit at room temperature for 30 minutes before baking.
