🍫 Gluten-Free Hot Cocoa Mix Brownies

Ingredients

1 cup gluten-free all-purpose flour (with xanthan gum included)

½ cup hot cocoa mix (regular or dark)

½ cup unsweetened cocoa powder

1 cup granulated sugar
-
½ cup melted butter (or coconut oil)
-
2 large eggs
-
1 tsp vanilla extract
-
¼ tsp salt
-
Optional add-ins:

½ cup chocolate chips
-
¼ cup chopped nuts
-
A pinch of instant coffee (boosts chocolate flavor)

Instructions
1. Prep

Preheat oven to 350°F (175°C).

Line an 8×8” baking pan with parchment or grease lightly.
2. Mix dry ingredients
In a bowl, whisk together:

Gluten-free flour
-
Hot cocoa mix
-
Unsweetened cocoa powder
-
Salt
3. Mix wet ingredients
In a separate bowl:

Beat eggs
-
Add melted butter
-
Stir in sugar + vanilla
4. Combine
-
Add dry mixture to the wet ingredients.

Stir until just combined (GF batter gets gummy if overmixed).

Fold in chocolate chips if using.
5. Bake

Spread batter into the pan.

Bake 22–28 minutes.

For fudgy brownies: pull them out when the center is slightly soft.

For cakier brownies: bake closer to 28 minutes.

6. Cool completely
Gluten-free brownies firm up as they cool. Slice after 20–30 minutes.
