🍫 Gluten-Free Hot Cocoa Mix Brownies

Makes an 8×8 pan

Ingredients

  • 1 cup gluten-free all-purpose flour (with xanthan gum included)

  • ½ cup hot cocoa mix (regular or dark)

  • ½ cup unsweetened cocoa powder

  • 1 cup granulated sugar

  • ½ cup melted butter (or coconut oil)

  • 2 large eggs

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • Optional add-ins:

    • ½ cup chocolate chips

    • ¼ cup chopped nuts

    • A pinch of instant coffee (boosts chocolate flavor)


Instructions

1. Prep

  • Preheat oven to 350°F (175°C).

  • Line an 8×8” baking pan with parchment or grease lightly.

2. Mix dry ingredients

In a bowl, whisk together:

  • Gluten-free flour

  • Hot cocoa mix

  • Unsweetened cocoa powder

  • Salt

3. Mix wet ingredients

In a separate bowl:

  • Beat eggs

  • Add melted butter

  • Stir in sugar + vanilla

4. Combine

  • Add dry mixture to the wet ingredients.

  • Stir until just combined (GF batter gets gummy if overmixed).

  • Fold in chocolate chips if using.

5. Bake

  • Spread batter into the pan.

  • Bake 22–28 minutes.

    • For fudgy brownies: pull them out when the center is slightly soft.

    • For cakier brownies: bake closer to 28 minutes.

6. Cool completely

Gluten-free brownies firm up as they cool. Slice after 20–30 minutes.
